Racks of reindeer is one of our most tasty and delicious reindeer products. The racks are perfect for barbeque as well as to roast in the oven. Racks are the reindeer saddle split in the middle and the meat itself is the outer fillet along with ribs. The tender meat should be relatively red when prepared, to be as juicy as possible.
These reindeer racks come from the reindeer sarv which is the large male animal. The reindeer sarv is about twice the size of an ordinary reindeer with a weight of up to 200 kg. The sarv is recognized by the size and large crown.
The sarv is slaughtered in September just before the rut, when he is at his greatest and most prosperous. The meat from the reindeer sarv has a firm texture and fat that lies on the outside of the meat like a coat.
The meat is a rare delicacy, possibly the very best reindeer meat that not many have the opportunity to try.
When barbecuing reindeer racks: as this detail has a fat coat which makes it very juicy and gives it more flavor, this you should keep on for the grill. Grill with the fat coat still on the meat because it protects the meat so it stays juicy while grilling. Make cuts in the coat to bring salt and spices into the meat. Grill over fairly low heat to a temperature of 52-53 degrees, then the result will be amazing, medium rare and very juicy.
