This is a great wild boar recipe for a climate-smart and incredibly good Christmas ham for the Christmas table. For the breading you can choose to add the spice mix or nor. The spice mix give an extra punch to the breading, so we can recommend it. If you prefer a more traditional taste of the Christmas ham you can skip it. Regardless, this is a clearly tastier, climate-smarter and definitely much healthier alternative than a regular Christmas ham.

Ingredients

Wild boar Christmas ham 1-2 kg

1-2 egg yolks (depends on the size of the eggs)

2 tbsp brown sugar

4 tbsp mustard from Skåne in Sweden (also works well with regular mustard)

1 dl breadcrumbs

2,5 ml ground allspice

1.5 ml ground black pepper

1 ml ground white pepper

0.5 ml ground cloves
-
1.5 ml ground ginger

Set the oven to 225 degrees celsius
Place the ham on an ovenproof plate
Mix egg yolks, brown sugar , mustard and the spice mix. Brush the mixture onto the ham and sprinkle with some breadcrumbs. Try to get it on all sides.
Grill the ham in the middle of the oven until it gets a nice color, about 10-15 min. If you want, scoop up a little broth from the ham and pour it over the ham to make the breading extra crispy.

Grind the different types of pepper and cloves separately in a mortar and put the right amount into a small bowl.
Add ground ginger and mix well.
