This is a great wild boar recipe for a climate-smart and incredibly tasty Christmas ham for the Christmas table. For the breading, you can choose to add the spice mixture or not. The spice mixture gives an extra dimension to the meat, so we can highly recommend it. Leave it alone if you prefer a more traditional taste of Christmas ham. Regardless of what you choose, the Christmas ham of wild boar instead of domestic pig is a clearly tastier, climate-smarter and definitely much healthier option

Ingredients

Wild boar Christmas ham 1,5 - 2 kg

1-2 egg yolks (depends on the size of the eggs)

2 tbsp brown sugar

4 tbsp Skånsk mustard (also works well with regular mustard)

1 dl breadcrumbs
Spice mix

2,5 pinch crushed allspice
-
1,5 pinch crushed black pepper

1 pinch crushed white pepper

0,5 pinch crushed cloves
-
1,5 pinch ground ginger

Breading
Set the oven to 225 degrees
Place the ham on an oven-safe dish
Mix egg yolks, brown sugar, mustard and the spice mixture. Brush the mixture onto the ham and sprinkle with some breadcrumbs. Try to get it on all sides.
Grill the ham in the middle of the oven until it gets a nice color, about 10-15 min. If necessary, scoop with a little ham spade to make the breading extra crispy.
Spice mix
Pound the different types of pepper and cloves individually in a mortar and place the right amount in a small bowl.
Add ground ginger and mix well.
