Luxurious lasagna with minced game meat, mushrooms and root vegetables

Fantastically delicious lasagna. Fresh, sliced mushrooms and grated root vegetables adds flavor and texture to the minced meat, in this case minced moose meat, but other minced meat of game meat can also be used. Aged, Swedish herrgårds cheese instead of Italian cheese makes a mild cheese sauce that works well with the game meat flavor.

Ingredients

500 g minced moose meat or other minced game meat

4 tbsp extra virgin olive oil

1 yellow onion finely chopped

1 garlic clove finely chopped

1 carrot coarsely grated

20 g celeriac coarsely grated

2 tbsp tomato puree

1 dl white wine (preferably Pinot Grigio)

400 g pureed or finely crushed tomatoes

250 g fresh mushrooms

1 dl water
-
1 meat bouillon cube
-
1 bay leaf
-
1 tsp dried oregano
-
Black pepper and salt

8 dl milk

4 tbsp extra virgin olive oil

4 tbsp wheat flour

2 dl aged herrgårds cheese coarsely grated

0.25 tsp nutmeg

12-15 lasagna plates

Instructions
Minced meat sauce
Wash and slice the mushrooms. Then fry them in butter in a sauté pan, until most of the liquid has boiled away. Pour into a bowl.
Pour the olive oil into the sauté pan and fry the minced venison until almost cooked through. Stir in onion, garlic, mushrooms, grated carrot, grated celeriac. Fry for a few more minutes.
Add tomato puree, white wine, and tomatoes. Stir and bring to a boil.
Add the meat stock cube. Pour in water, oregano and bay leaves.
Let simmer while stirring for 60 min. Cover with a lid but leave a gap.
Season with black pepper and salt.
Cheese sauce
Heat the milk in a saucepan.
Heat the olive oil in another saucepan and whisk the flour into the oil.
Pour the hot milk into the saucepan with the olive oil and the flour while whisking.
Let it boil for a couple of minutes.
Stir in the grated cheese to melt and the nutmeg. Season with salt.
Assembly and frying
Pour a little of the cheese sauce in the bottom of an ovenproof casserole.
Lay on a layer, 3 lasagna plates and then minced meat sauce.
Continue alternating sauce, lasagna plates and minced meat sauce. Finish with plates and cheese sauce as the top layer.
Top with grated cheese.
Fry in the lower part of the oven. 60 minutes at 200 degrees celsius. If fresh lasagna plates are used, bake for 30 minutes at 225 degrees celsius. Cover with tinfoil if necessary to prevent the lasagna from getting burnt. Take it out and leave for a while to cool down. Serve with a salad and something good to drink.
