Moose burgers with pancetta

Moose burgers is the ultimate burger for the grill. Moose meat has a much fuller taste compared to normal beef and is perfect for both young and old. In this recipe, we add a little pancetta to give the burgers a little more juiciness and a little more saltiness.
Ingredients

500g moose mince

1/2 yellow onion

50g pancetta or bacon

1 tsp mustard

1 tbsp olive oil

Salt and pepper
Instructions
Place the moose mince in a bowl. Grate the onion and chop the pancetta/bacon. Put it in the bowl together with the mustard and olive oil. Work everything together into an even mass. Salt and pepper while mixing.
Take out an appropriate amount of mince mixture and form a hamburger. A tip is to use an approx. 2 cm high dish with straight edges as a form. Alternatively, you can take a plastic bottle and cut out a 2-3 cm wide ring and use it as a form. Pack the mixture relatively thick and then poke it out with a knife.
If you want to grill the hamburger, another tip is to first fry it in a hot frying pan for 20-30 seconds on each side before placing it on the grill. That way it holds together better. Also, brush the hamburger with olive oil just before placing it on the grill.
Grill or fry for about 3-4 minutes on each side or longer for more well-grilled. You can use lids to make them juicier, but it's entirely up to you.
Worth noting that as a Swede you can of course have lingonberry jam with everything, including hamburgers as we show in the picture.
