Reindeer liver is the classic "inner food" or offal that people like to use from the reindeer. It is common to fry the liver in a frying pan for a short time so that it does not become too dry. 52 degrees internal temperature is good to aim for. There is a good recipe for Älglever anglais (page 51) in the cookery book Kocken och jägaren where you can advantageously replace moose liver with reindeer liver. It is very suitable if you are generally new to offal food.
It is also common to cook reindeer liver. Make small cuts in it and let it simmer in lightly salted water (not boiling). When it turns a pink colour, it is ready.
