Wild boar meat in general have a slightly milder game flavour compared to other wild animals. The domestic pig is the animal that is closest in flavour to wild boar. However, a major difference is that the wild boar has lived its life in the wild and only eaten what nature has to offer - hence the wild boar meat has a different and naturally good flavour.
The wild boar carcass has some fat embedded in it, which makes it a little fatter and juicier.
The meat is also a very affordable option compared to other game parts. This is largely due to the fact that we in Sweden do not have a long tradition of wild boar in the country. This means that demand is slightly lower than for moose meat and reindeer meat, for example.
Wild boar carcass is part of the front part of the pig and a fantastic detail to grill. Wild boar meat can withstand slightly higher temperatures compared to other wild animals. The meat has a rather mild game flavour compared to reindeer and deer, so you can advantageously season it and also put it in marinade about an hour before grilling. 65 degrees is perfect for wild boar loin.
The meat is, of course, trichini-tested at a certified Swedish game processing plant.
The wild boar fillet is sent vacuum-packed and frozen.
