Moose croquettes with mushroom sauce and onion and apple compote

Moose croquettes is a simple but versatile dish that can be prepared in many different ways. They can be grilled, fried in a pan or cooked in the oven. Classic accessories for moose croquettes are potatoes, carrots, parsnips etc.

Ingredients

500 g minced moose meat

1 egg

½ dl breadcrumbs

½ dl cream

1 dl blue cheese (optional)

1.5 tsp salt

2 ml black pepper

2 finely crushed juniper berries

1 yellow onion
-
1 apple
-
1 tbsp seasoned butter
-
1 small yellow onion or 3 shallots

25 g butter to fry in

200-300 g chanterelles

200 g fresh mushrooms

1 tbsp veal stock
-
3 dl cream
-
2 tbsp white wine
-
2 tbsp wheat flour

0.5 tsp salt

1 ml black pepper

Mushroom sauce
Instructions
Moose croquettes
Mix cream, eggs and spices with the breadcrumbs and let it soak for about 10 min
Stir in the minced meat and cheese, season with salt and pepper.
Shape into 12-16 balls and place them on a baking paper
Put into the preheated oven at about 170-190 degrees celsius set the core temp for alarm at 65 degrees
Onion and apple compote
Mix a couple of tablespoons of the seasoned butter with a roughly cut apple and yellow onion
Put it in a frying pan, and let the butter fry into the apple and onion
Mushroom sauce
Chop the onion finely.
Saute the onion in a saucepan
Add the mushrooms in the saucepan and let it boil over low heat, about 10-15 minutes until most of the liquid has boiled away.
Add wine and cream and let the sauce boil.
Add stock and spices according to taste.
Serve with e.g. mashed almond potatoes
