We like to describe the reindeer chuck shafing, skav, as the "king of reindeer shafings". It has just as fine pieces as our gourmet shafing and also comes from the chuck, which is a slightly finer detail than the steak that the gourmet shafing is made from. We would probably say that our new version of this Norrland classic is the finest reindeer shafing that you can buy.
Chuck shafing is, just like the gourmet shafing, much finer than the "shafing" you unfortunately often find in the grocery store. All our shafing is made in the "real" way, i.e. we have taken a steak that is still slightly frozen and then sliced it into thin slices. This results in large and fine pieces that look exactly like the product picture.
Reindeer shafing is very easy to prepare. We usually fry it in a couple of batches (depending on the size of the frying pan) on high heat. Chop and add some onion in the last round. Then put all the fried reindeer meat in the pan and add cream, about 2 dl for 400g of reindeer meat. Add salt and pepper. Bring to the boil over a low heat. If you want, add some crushed juniper berries and lingonberry jam (raw lingonberries are also good, but sometimes it can be good to add the sweetness of the lingonberry jam). Serve with pressed potatoes and raw lingonberries (or extra fine lingonberry jam). Very tasty!

Origin: Sweden. The reindeer comes from one of the 4 sami villages around Arvidsjaur, which owns and operates Arvidsjaur Renslakt, which has also produced the reindeer meat.
