Brown it all over in butter so that the meat has a nice surface and then let it finish in the oven. Serve the wild boar roast with baked root vegetables and a flavourful and rich cream sauce with herbs and chanterelles. Incredibly tasty!
Our wild boar meat is of course trichini-tested, so it is no problem to let the meat keep a similar internal temperature as other game, which will guarantee that the roast does not become dry but remains wonderfully tender in texture.
