Mouflon live wild in various parts of southern Sweden. The limited availability of this wild sheep makes Swedish mouflon meat a unique and hard-to-find delicacy.
Mouflon saddle is one of the finest cuts of mouflon and an exciting choice when you want to serve something truly special. The saddle contains the tender meat along the back and is particularly well suited for roasting whole in the oven.
Mouflon has a distinctly different flavour from domestic sheep and lamb. The meat is darker and has a richer game flavour that is more reminiscent of venison. This makes mouflon saddle an excellent choice for anyone who appreciates flavourful game meat and wants to try an exceptionally rare Swedish wild game delicacy.
How to cook mouflon saddle
Brown the mouflon saddle all over in butter, preferably together with garlic, thyme or rosemary. Season with salt and pepper, then roast in the oven at around 125–150°C until the meat reaches an internal temperature of approximately 54–56°C for a pink and juicy result. Allow it to rest for 10–15 minutes before removing the meat from the bone and carving.
Serve with roasted root vegetables, mushrooms, potato purée and a rich red wine or game sauce.
The meat is delivered vacuum-packed and frozen.

Once the fat, skin and sinew were removed, the cooked meat turned out to be excellent. Mild gamey flavour, no "kofta" taste and perfectly tender. Taste like venison I think.
