Suovas, Sami for "smoked", are various forms of salted and lightly smoked reindeer meat. Reindeer meat is first salted for about a day and then traditionally cold-smoked in a hut.
Birch or willow is usually used for smoking. It is important that the wood is removed to avoid soot. Smoking takes a relatively long time, often one to two days.
