The bear fillet is the most exclusive and unusual game detail we can offer. Bear meat has a wonderfully strong game flavour and the fillet is the finest part of the bear. This is a game detail for someone who wants to offer something really special from the Swedish forests.

The bear comes from Sweden, of course, and the meat is tested for trichinosis at a certified Swedish game processing plant.

The bear is a real omnivore and the flavour of the bear meat often depends a lot on what it has eaten during the year. It is said that bear meat tastes best when the diet consists largely of berries and therefore the meat should be at its best during a good blueberry year.

The brown bear is characterised by its large head, small eyes and a thick coat that varies from light brown to dark brown. An adult Swedish bear can reach an impressive length of almost 3 metres and a height at the withers of 150 centimetres. A male can weigh over 300 kg and a female 200 kg.

The bear was almost extinct in Sweden in the early 1900s, but is now protected and has recovered to a viable and stable population of almost 3,000 animals. It is generally found from Dalarna and Gävleborg counties northwards.

The hunting season is between 21 August and 15 October, but ends earlier if the year's maximum allocation has already been reached.

We think the bear fillet is best cooked whole in the oven or as tournedos that you can fry in a hot pan or on direct heat on the grill. In this case, cut them into thick slices (3-4 cm). Salt before and pepper after. For tips on cooking in the oven, we can recommend our recipe for game meat in the oven.

            Bear is better than Wagyu

            Bear is really good! I marinated it for about 48 hours before I put it on the grill and heated it up to 55 degrees. Incredibly tender and fine meat, with surprisingly little gamey flavour. Better than Japanese wagyu :-)
