Deer top round is the finest roast from the fallow deer and makes a very good Sunday roast that is relatively easy to prepare. Tie up the meat with household string, salt and pepper. Then brown the venison roast all over in butter in a frying pan and then roast it in the oven. Deer is lighter in colour than reindeer and very delicate.
Deer roast makes an excellent family dinner, serve with hazelnut potatoes and boiled Brussels sprouts.
If you are grilling the deer top round, we have some tips. As this meat is extremely lean, it is therefore more delicate to grill. 50-58 degrees is the right temperature range to aim for. Grill it properly for a short time to give it a surface area, but then put it on the side of the grill where it is less hot and let it "sneak" through. Use meat thermometers and pick it off a few degrees below the target. The meat is incredibly tender and tasty and becomes even more tasty if you season it with Chef and Pig's barbecue salt, which makes it taste twice as grilled.
