This Swedish black Baerii Caviar is a new variant of the original Swedish Black Caviar - Arctic Tradition. Like the original, it is live-harvested caviar from Siberian sturgeon (Acipenser Baerii) grown indoors in Småland.
This caviar is stabilised using a unique method without heating. This gives the rum grains a "poppy" integrity and does not release all the flavours at once. There's a mineral ocean with a hint of fresh oysters that breaks off with its lovely buttery, creamy nuttiness and a big wave of umami, followed by a long umami aftertaste. The salt content is 3.7%.
It should be added that each fish has its own character, some tasting more sea, nut or umami and some less. But the variations are quite small, which is part of the charm of Single Fish Caviar.
Livestock harvested roe grains are larger in size than the equivalent grains from slaughtered fish. The best-before date is about 6 months from the day of production, given a storage temperature of no more than +4 degrees Celsius.
This quality caviar is grown in Sweden in a way that is sustainable for nature in a closed cycle. In addition, the roe is produced by "milking" live fish, i.e. no sturgeon is killed in production. The business is run in Strömsnärsbruk in Småland by Arctic Roe of Scandinavia, which focuses on quality, ecological sustainability and, of course, the well-being of the fish.
Each can is normally labelled with the name of the fish that the roe comes from. All sturgeon females have been given Ukrainian or Russian female names after famous historical figures.
Black caviar from Siberian sturgeon is delicious on its own, but is also very suitable as a garnish for dishes.
Caviar should be stored cold in the refrigerator at a maximum of +4 degrees. It has a best-before date of 6 months from the date of production at a maximum of +4 degrees. It can also be frozen in some cases if thawed slowly once. However, deep freezing does not benefit the flavour experience but can be used when the best-before date is approaching, if it does.
Black caviar is best enjoyed at room temperature, i.e. you should take it out of the fridge 15-20 minutes before serving and loosen the lid so that air and heat can enter.
